Mini Microwave Triple Chocolate Cake

This is a Hungry Girl recipe that I love because it's chocolaty(duh!), easy & fast. Plus, the kids like it because it's just their size!

2 tbsp. chocolate cake mix
2 tbsp. Cool Whip
1 tbsp. fat-free vanilla yogurt
1 tbsp. chocolate syrup

In a microwave-safe mug (or a ramekin), combine cake mix and yogurt. (Don't worry if it seems like a small amount. Your cake will puff up -- we promise!) Stir until smooth and blended. Microwave for 1 minute, and then allow to cool for 5 minutes. Once cake has cooled, add a dollop of cool whip & a drizzle of chocolate syrup. Enjoy!

Chocolate Covered PB Pretzel Sandwiches

No need for a written out recipe for this.. just a simple explanation will do. :)

You can either melt chocolate chips using the double boiler method (put a sauce pan on the stove with a little simmering water (not boiling) and a glass bowl inside of it. Make sure not to let the bowl touch the water and make absolutely sure you do not get a single drop of water in your chocolate or it will seize and turn to what looks like sand! Stir constantly until chocolate is smooth.)or in the microwave.

Make the peanut butter pretzel sandwiches by spreading some PB on one pretzel then adding another pretzel to make a "sandwich".

Dip the pretzel sandwiches into the melted chocolate then set on cooling rack(or plate).

Repeat steps to make as many as you can :)

Vanilla Stevia Drops to taste, or your favorite natural sweetener

You will need an ice cube tray for this. Heat up milk in a saucepan or microwave until hot but not boiling. Stir in cocoa powder and stevia to taste. Pour hot chocolate into ice cube tray. Freeze until solid and enjoy! You can add these to hot chocolate or milk.

Angel food poke cake with simple strawberry sauce

Let's do this the easy way shall we?

Angel Food Cake mix- prepare as directed on the box

Strawberry Sauce:
2 quarts fresh strawberries, cleaned, hulled and sliced
1/2 cup white sugar

I added the cut up strawberries in a small pot along with the sugar. I then mashed the strawberries and let it cook for a few minutes so it can thicken.

Make the strawberry sauce while the cake is baking.
Poke a few holes on top using the handle of a wooden spoon.
Then pour the strawberry sauce on top.

Biscuit Donuts

I remember thinking how cool it was that MY mom knew how to make donuts lol And now I love to make them for my kids.

Premade biscuits from a can, use a bottle cap to punch the holes and then I fry them for about a minute or until both sides are golden. Use whatever frosting you have on hand or melt chocolate chips in the microwave. I also added some powdered sugar in a brown paper bag, added the donut holes and shaked it. Ta-Da!

1 teaspoon baking powder
1 cup all-purpose flour
1/4 cup margarine, melted

Pineapple Angel Fluff Cake Trifle

The original recipe came from The Frugal Girls but I had a cake mishap- Eek! My cake was almost as flat as a pancake when it was done baking. So I decided to make a trifle with it! I followed TFG's recipe for the pineapple angel food fluff cake so let's get to that first!

1 box of Angel Food Cake Mix
1 can of Crushed Pineapple - approx. 20 oz.

Mix powder cake mix and crushed pineapple {including the juice from the can} together…
{don’t add any other ingredients}

Place in 9×13 ungreased baking dish…

Bake at 350 degrees for 33 – 38 minutes.

Now on to the trifle part..

1/2 - 1 cup of coconut flakes
container of Cool Whip
When cake is cool enough to handle, crumble up with hands.

Toast coconut flakes on a pan on low-medium, constantly stirring until toasted and set aside.

In a large bowl (I used a punch bowl) start layering all of your ingredients (including the cake).
Cake, cool whip, coconut flakes... If you have chocoholics, you can add chocolate chips in those layers also. Oh! And drizzle some chocolate syrup on top!

And you are done! It turned out pretty good. My mom loved it because she's a coconut fanatic.

Chocolate Croissants

1 Package of Crescent Rolls
1 Cup of Chocolate Chips ( Milk Chocolate or Dark Chocolate)
1 Egg
Vanilla Extract ( Optional)

Preheat Oven To 425 and beat the egg in a small dish.

Unroll Crescent Rolls – with the larger section facing you. Place about 25 chocolate chips. You should use up about 3/4ths of the chocolate chips once you are done.

Brush a small amount of vanilla over the chocolate chips – this is optional.

Roll the dough into croissant shape.

Brush egg on the croissant ( this will give it that amazing brown coloring. Please note you will only be using a small portion of the egg ;) ).

Place croissants onto a cookie tray.

Place tray into the oven and cook until golden brown about 15 – 20 minutes.

Melt the rest of the chocolate chips in the microwave. Heat the chips for only 30 seconds at a time so you will not burn the chocolate.

Drizzle melted over cooked croissants.
Enjoy :)

Easy Cake Truffles

The only thing I did was make the cake, shredded the cake with my hands, formed mini balls, warmed up the frosting and dipped the cake balls in the melted frosting. I should have added the frosting into the crumbled cake and refrigerated it like the recipe said but, I couldn't find the dang recipe when I needed it. So my suggestion is follow the recipe! lol

  • 1 Box of Chocolate Fudge Cake Mix
  • Ingredients to prepare Cake Mix {eggs, oil, etc.}
  • 1 can of Chocolate Fudge Frosting
  • 2 bags of semi-sweet Chocolate Chips

  • Prepare cake mix, and bake as directed.

After cake has cooled, crumble entire cake into bowl.
Add in entire can of frosting, and mix well.

    Place mixture in refrigerator until firm. {may take a few hours}

Once mixture has firmed up and cooled, use melon baller or a spoon {then roll with hands} to scoop out balls.

Melt Chocolate Chips in separate bowl {I melt mine in the microwave}.

Dip cake balls into melted chocolate, then set on waxed paper to dry.

While still wet, sprinkle with coconut, sprinkles, etc.

Once they are dry, they’re done!

Transfer to a pretty plate and enjoy!!

I also turned some of the cake truffles into donut holes by rolling them around in powdered sugar.

    Buttery Soft Pretzels

    4 teaspoons active dry yeast

    1. In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.
    2. In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.
    3. Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water.
    4. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with kosher salt.
    5. Bake in preheated oven for 8 minutes, until browned.
